Finding an apt translation for Topfen (or Quark) is harder than one might think.
Here’s what Wikipedia has to say about this, just to clear things up.

Moving on. It had never occured to me to add curd cheese to my porridge, until my Instagram feed was suddenly swamped with it.
So I thought “Heck, why not give it a try?”
And I did.
And it was glorious.

Curd Cheese Porridge (of your choice)
Ingredients
1 portion of the porridge of your choice
Milk
Curd Cheese (I added about 1 table spoon per portion)
Fruit (I used one half of a Granny Smith apple)

What to do

Make the porridge as instructed. If you don’t have a ready made one you can always make it yourself by cooking up oatmeal and adding whatever fruit or dried berries you have. Nuts or coconut are also a nice addition.
Personally, I love the combination of coconut flakes, some ground nuts (almonds or hazelnuts), and dried cranberries.
You can cook it either with water or with milk. Personally I prefer milk, but that’s completely up to you (some recipes also say you can mix and add in water and milk. I haven’t tried that yet.)

Let the porridge cook until it reaches the desired texture. I made mine a bit thicker than usual because the curd cheese I add softens it up again.
Then add the curd cheese, stir until well combined and top of with the fruits of your choice.

Tip:
I like to add a little bit of sugar.

Peanut butter-Banana-Chocolate-Oatmeal Cookies

I feel like it might take you longer to say that recipe name than it does to bake these cookies.

In an attempt to get rid of the excess amount of peanut butter that was residing in my kitchen, I looked up a couple of recipes. Originally my plan was to make peanut butter granola, but then I found a recipe for peanut butter-oatmeal cookies and just couldn’t resist. I haven’t made cookies in so long!

This is the recipe source I used, but I adapted it (I only had one banana, and no coconut oil or agave sirup, so I split the amount in half and worked with what I had at home).

Ingredients

1 large, ripe banana
1/2 tbsp sunflower oil
1 tbsp honey
1/4 cup of peanut butter (the original source said creamy, I used chunky and I like that it has the extra crunch to it!)
1 1/4 cup of rolled oats
1/2 tsp baking powder
1/4 tsp cinnamon
a pinch of salt
1/2 cup of dark chocolate (I chopped it myself, but chocolate chips work just as well) I used more because… chocolate!

What to do

Pre-heat the oven to 180°C (350°F) and line a baking sheet with baking paper.
Mash the banana in a large bowl. Add the peanut butter, honey and oil, mix until it is smooth. In a medium bowl mix together the oats, baking powder, salt and cinnamon. Add it to the banana-peanut butter mix and stir it together. Add the chocolate chunks and stir until it is well blended.
Use 2 spoons and drop the mix on the baking sheet. Bake for around 10 minutes or until the cookies set.

(Skinny) Apricot Loaf Cake

Apricots are in season once again. My mum brought home a bunch from a friend’s garden and I didn’t know what to do with them. All I knew was, that I  was sick and tired of the usual apricot cake recipes.
So I went over to Pinterest and looked around for a bit. Pinterest never fails to provide me with fun and easy recipes, today was no exception. After a while I found a recipe that sounded promising. I altered it a bit. You should know by now that I’m a lazy baker ;-)

Ingredients

2 cups / 10,5 oz / 300g all purpose flour
1/2 cup / 3,5 oz / 100g brown sugar
2 eggs
3/4 cup / 6,7 oz / 190g greek yoghurt
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp salt
1lb / 450g ripe apricots (cored and cut into small pieces)

Optional
1 tsp vanilla extract
1/2 tbsp fresh grated ginger
I imagine cinnamon would work too.

I didn’t use any of this and it still turned out really well.

What to do

Pre-heat the oven to 360°F/180°C. Butter and flour a loaf pan.
Sift together the flour, baking soda, baking powder and salt. Set aside.
In a medium bowl beat sugar and eggs together. Gently mix in the yoghurt. Stir in the dry ingredients and fold in the apricot pieces. Make sure it’s all blended well together. I was a bit concerned at first because the batter was firmer than what I usually work with but don’t let this deter you, mine turned out really well and moist in the end.
Pour into the prepared pan and bake for about 50 minutes or until a skewer comes out clean. Mine was done after about 40 minutes.

Lately.

The lack of recent blog posts is probably easily explained: Christmas. University. Work. Christmas.

So, if you’re not following me on Instagram, here’s a short recap of what I’ve been up to the past few weeks.

Snow has yet to really make an appearance in Vienna, though we’ve had a little. Still, the forests surrounding my hometown make more than up for it as they’re currently covered in thick frost. It’s truly magical to look at. I took Sargon for a ride in the forest and we even met some deer along the way. It’s like a fairytale. Still, here’s to hoping we do get a little snow until the 24th.

As mentioned in the last blog post, Vienna during Christmas time is a great place to be. I really cannot say this often enough and I kind of feel bad about not blogging about it more often. In any case, here are some impressions of how the city looked like the past few weeks.

The weather here wasn’t the best all the time, but let’s be honest, there’s something soothing about rainy days as well.
I tried fighting back with festive nails (Essie’s Shearling Darling and a top coat of golden glitter nail polish) while sipping copious amounts of tea and coffee. It works.

At home we tried hard to make the house look a bit more Christmasy. We don’t have a tree as we celebrate Christmas at my grandparent’s house, but there are some little things that can be done to get into a festive mood.
I also hosted my annual Christmas party again which was a relaxing evening spent drinking punch and stuffing ourselves with melted cheese and homemade cookies. As it should be, I guess.

I also started sewing to make my mum’s Christmas presents, using some of the fabrics I brought home from Tanzania and Togo. I’m actually super happy and proud with how it turned out, seeing as I haven’t sat in front of a sewing machine since elementary school. This might be a new hobby.
Kat, of That Kind of Woman posted a recipe idea for brunch on Instagram a while ago and I finally had time to give it a try. It’s safe to say that this will be made more often from now on.
(Bacon then vegetables and basically whatever you fancy on top, before cracking some eggs over it and putting it in the oven)

Oh, and I also cut off a good bit of my hair.
I don’t regret it at all, this change has been waiting to happen for a while now and I couldn’t be happier with how it turned out :)
